Parmesan Roasted Zucchini

Serves 4

Ingredients

3 medium zucchini 
Olive oil to coat zucchini
1/2 cup Panacheeza
3/4 cup dairy or dairy-free mozzarella
1/2 cup panko bread crumbs
Salt and freshly ground black pepper

Directions

  1. Preheat the oven to 425 degrees F.
  2. Trim the stems of the zucchini and cut into a half inch spears lengthwise. Place the zucchinis in a bowl and toss with olive oil to coat. Lay evenly on baking sheet.
  3. Sprinkle mozzarella, Panacheeza and breadcrumbs overtop zucchinis. Season with salt and pepper to taste. Drizzle olive oil.
  4. Roast for 10 to 12 minutes, until tender but still firm when tested with the tip of a knife.
  5. After the zucchinis are roasted, set the oven to broil and place in the oven for 5 minutes or until the cheese is crispy and bubbly.
