3 medium zucchiniOlive oil to coat zucchini
1/2 cup Panacheeza
3/4 cup dairy or dairy-free mozzarella
1/2 cup panko bread crumbs
Salt and freshly ground black pepper
Directions
- Preheat the oven to 425 degrees F.
- Trim the stems of the zucchini and cut into a half inch spears lengthwise. Place the zucchinis in a bowl and toss with olive oil to coat. Lay evenly on baking sheet.
- Sprinkle mozzarella, Panacheeza and breadcrumbs overtop zucchinis. Season with salt and pepper to taste. Drizzle olive oil.
- Roast for 10 to 12 minutes, until tender but still firm when tested with the tip of a knife.
- After the zucchinis are roasted, set the oven to broil and place in the oven for 5 minutes or until the cheese is crispy and bubbly.
